This No Cook Raspberry Freezer Jam is the perfect way to preserve those amazing summer berries when you are in a hurry.
One of my favourite parts of summer is heading out to one of the local u-pick farms early in the morning and picking baskets full of fresh amazing local fruit.
One thing I have no plans on doing in the summer?
Not spending ages over a hot stove preserving said fruit. I do love jam though so this no cook raspberry freezer jam recipe is the perfect way to take some of those berries and make some fresh homemade jam without all the sweat.
No Cook Raspberry Freezer Jam
INGREDIENTS:
1 pt fresh Raspberries (about 2/3 cup mashed)
3/4 cup Sugar
3 tsp Real Fruit Pectin
DIRECTIONS:
Boil an 8 oz Mason jar, lid and ring to sterilize.
Mash raspberries and verify that you have 2/3 cup.
Add sugar and pectin and mix well to dissolve.
If texture seems grainy, microwave for 30 seconds and continue stirring.
Transfer mixture to mason jar place lid and screw on lid.
Place in freezer until ready to use or in refrigerator if you will use now.
